Wow, you won’t believe the number of times we get asked this question!
Seems like people want to buy a crossbow that is famous rather than one that is actually good!
Well, actually Daryl Dixon uses 2 crossbows:

In Season’s 1 & 2 of the Walking Dead he uses a Horton Scout 125 HD |

From Season 3 he uses a Stryker Strykezone 380 |
However, the funny thing is neither of them are great crossbows!
Daryl Dixon should have tried to get his hands on the Barnett BCX Buck Commander (shown below). The huge amount of power in this crossbow would have obliterated the zombies!
